Pietisten Blueberry Pancakes (or Waffles)

A tip o’ the hat to Mary Nygaard of Carouge, Switzerland

2 cups of organic whole wheat flour (If you like, lighten to taste with organic white flour)
2 tsp. baking powder
1 tsp. baking soda
Mix dry ingredients
2 cups buttermilk
2 eggs
6 tbs. canola oil

Stir all ingredients and add blueberries (strawberries, raspberries, blackberries, etc. All taste good alone or added in as suits you, your company, and your berry supply). The batter is thick, so spread it thinly on the griddle or pop the batter into the waffle iron.

Gunny made wonderful, thin Swedish pancakes and she would have loved our Pietisten Pancakes as well.
