Gunny’s Potato Casserole
12 medium potatoes-cooked and peeled
8 oz. cream cheese
1/4 cup butter
1/2 cup sour cream
1/2 cup milk
2 eggs lightly beaten
1/4 cup chopped onion
1 tsp. salt and dash of pepper
Mash hot potatoes and add rest of ingredients. Beat until fluffy. Place in buttered casserole. Refrigerate several hours or overnight. Bake at 350 degrees, about 45 minutes, or until lightly browned.
